- 1.5 lbs chicken thighs (about 4–6 pieces)
- 1/4 cup fresh lemon juice (about 2 lemons)
- 4 cloves garlic, minced
- 2 teaspoons fresh thyme (or 1 teaspoon dried thyme)
- 2 teaspoons fresh rosemary (or 1 teaspoon dried rosemary)
- 4 medium carrots, peeled and cut into 1-inch pieces
- 1 cup chicken broth
- 2 tablespoons olive oil
- 1 teaspoon salt (or to taste)
- 1/2 teaspoon pepper (or to taste)
Instructions
- Pat the chicken thighs dry with paper towels and season both sides with salt and pepper.
- In a skillet over medium heat, add olive oil and sauté minced garlic for about 1 minute until fragrant.
- In the crockpot, place the seasoned chicken thighs at the bottom, add sautéed garlic, lemon juice, thyme, rosemary, and chicken broth, and stir gently to combine.
- Arrange the carrot pieces on top of the chicken mixture.
- Cover the crockpot and cook on low for 6-7 hours or on high for 3-4 hours until the chicken is tender and fully cooked.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- To reheat, warm in the microwave or on the stovetop until heated through.
- For freezing, place in a freezer-safe container for up to 3 months.
