Description

A delightful dish that combines juicy chicken with tender carrots, infused with zesty lemon and aromatic herbs, perfect for family dinners or gatherings.


Ingredients

  • 1.5 lbs chicken thighs (about 46 pieces)
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • 4 cloves garlic, minced
  • 2 teaspoons fresh thyme (or 1 teaspoon dried thyme)
  • 2 teaspoons fresh rosemary (or 1 teaspoon dried rosemary)
  • 4 medium carrots, peeled and cut into 1-inch pieces
  • 1 cup chicken broth
  • 2 tablespoons olive oil
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon pepper (or to taste)

Instructions

  1. Pat the chicken thighs dry with paper towels and season both sides with salt and pepper.
  2. In a skillet over medium heat, add olive oil and sauté minced garlic for about 1 minute until fragrant.
  3. In the crockpot, place the seasoned chicken thighs at the bottom, add sautéed garlic, lemon juice, thyme, rosemary, and chicken broth, and stir gently to combine.
  4. Arrange the carrot pieces on top of the chicken mixture.
  5. Cover the crockpot and cook on low for 6-7 hours or on high for 3-4 hours until the chicken is tender and fully cooked.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • To reheat, warm in the microwave or on the stovetop until heated through.
  • For freezing, place in a freezer-safe container for up to 3 months.
