Ingredients

  • 2 chicken breasts, cut into bite-sized pieces
  • 4 medium potatoes, diced
  • 4 tablespoons butter
  • 4 cloves garlic, minced
  • 1 lemon, juiced and zested
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat 2 tablespoons of butter in a skillet over medium heat.
  2. Add diced potatoes and cook until golden brown and tender, about 10-15 minutes.
  3. Remove potatoes from the skillet and set aside.
  4. Add remaining butter to the skillet and sauté garlic until fragrant.
  5. Add chicken pieces, season with salt, pepper, and thyme. Cook until chicken is browned and cooked through.
  6. Stir in lemon juice and zest, then return potatoes to the skillet. Mix well.
  7. Cook for an additional 2-3 minutes to heat through.
  8. Garnish with fresh parsley before serving.
