Lavender Creme Brûlée

Description

A creamy dessert infused with the delicate flavor of lavender.


Ingredients

  • 2 cups heavy cream
  • 1 cup whole milk
  • 1/2 cup granulated sugar
  • 1 tablespoon dried lavender buds
  • 5 large egg yolks
  • 1 teaspoon vanilla extract
  • 1/4 cup granulated sugar (for topping)

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a saucepan, combine heavy cream, milk, sugar, and lavender. Heat over medium until just simmering.
  3. Remove from heat and let it steep for 15 minutes.
  4. Strain the mixture to remove lavender buds.
  5. In a bowl, whisk egg yolks and vanilla extract until combined.
  6. Slowly add the warm cream mixture to the egg yolks, whisking continuously.
  7. Pour the mixture into ramekins.
  8. Place ramekins in a baking dish and fill the dish with hot water halfway up the sides of the ramekins.
  9. Bake for 40-45 minutes until set but still slightly jiggly in the center.
  10. Remove from oven and cool to room temperature, then refrigerate for at least 2 hours.
  11. Before serving, sprinkle sugar on top and caramelize with a kitchen torch or under the broiler until golden brown.

Notes

  • Use culinary-grade lavender for the best flavor.
  • Be careful not to overcook the custard.
  • Let the crème brûlée chill thoroughly for best texture.
