Description
A low-carb twist on classic deviled eggs, packed with flavors from spinach and artichokes.
Ingredients

- 6 large eggs
- 1/2 cup cooked spinach, chopped
- 1/2 cup canned artichoke hearts, drained and chopped
- 1/4 cup mayonnaise
- 1 tablespoon Dijon mustard
- Salt and pepper to taste
- 1 tablespoon lemon juice
- 1/4 cup grated Parmesan cheese
Instructions
- Hard boil the eggs, then cool them under cold water.
- Peel the eggs and slice them in half lengthwise.
- Remove the yolks and place them in a bowl.
- Add spinach, artichokes, mayonnaise, mustard, salt, pepper, lemon juice, and Parmesan to the yolks.
- Mash the mixture until smooth and well combined.
- Spoon or pipe the mixture back into the egg whites.
- Garnish with additional artichoke or spinach if desired.
- Chill before serving.
Notes
- Use fresh spinach for better flavor.
- Adjust seasoning according to your taste.
- Store leftovers in the refrigerator for up to 2 days.
