Description

A low-carb twist on classic deviled eggs, packed with flavors from spinach and artichokes.


Ingredients

Scale
  • 6 large eggs
  • 1/2 cup cooked spinach, chopped
  • 1/2 cup canned artichoke hearts, drained and chopped
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste
  • 1 tablespoon lemon juice
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Hard boil the eggs, then cool them under cold water.
  2. Peel the eggs and slice them in half lengthwise.
  3. Remove the yolks and place them in a bowl.
  4. Add spinach, artichokes, mayonnaise, mustard, salt, pepper, lemon juice, and Parmesan to the yolks.
  5. Mash the mixture until smooth and well combined.
  6. Spoon or pipe the mixture back into the egg whites.
  7. Garnish with additional artichoke or spinach if desired.
  8. Chill before serving.

  • Use fresh spinach for better flavor.
  • Adjust seasoning according to your taste.
  • Store leftovers in the refrigerator for up to 2 days.
