Description

A refreshing and low-carb salad that mimics the flavors of a traditional pasta salad without the carbs.


Ingredients

  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1 cup broccoli florets
  • 1/2 cup black olives, sliced
  • 1 cup mozzarella balls
  • 1/4 cup red onion, diced
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Prepare all vegetables by washing and cutting them as indicated.
  2. In a large bowl, combine cherry tomatoes, cucumber, bell pepper, broccoli, black olives, mozzarella balls, and red onion.
  3. In a separate small bowl, whisk together olive oil, red wine vinegar, Italian seasoning, salt, and pepper.
  4. Pour the dressing over the salad and toss to combine.
  5. Chill in the refrigerator for at least 30 minutes before serving.

  • This salad can be made a day ahead for better flavor.
