Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, mix ground beef, Parmesan, breadcrumbs, egg, garlic, parsley, salt, and pepper.
- Form mixture into small meatballs and place on a baking sheet.
- Bake meatballs for 20 minutes or until browned.
- In a large pot, bring chicken broth to a boil.
- Add carrots and pasta; cook until pasta is done.
- Add chopped greens and cooked meatballs to the pot.
- Simmer for an additional 5 minutes.
