Irish Chicken Stew

Description

A hearty and comforting traditional Irish chicken stew.


Ingredients

  • 4 chicken thighs
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 carrots, sliced
  • 2 potatoes, diced
  • 3 cups chicken broth
  • 1 teaspoon thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chicken thighs and brown on all sides.
  3. Remove chicken and set aside.
  4. Add onion, carrots, and potatoes to the pot and sauté until softened.
  5. Return chicken to the pot.
  6. Pour in chicken broth, add thyme and bay leaf.
  7. Bring to a boil, then reduce heat and simmer for 30-40 minutes.
  8. Season with salt and pepper before serving.

Notes

  • Serve with crusty bread for a complete meal.
  • You can add peas for extra color and nutrition.
