Description
A hearty and comforting traditional Irish chicken stew.
Ingredients

- 4 chicken thighs
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 carrots, sliced
- 2 potatoes, diced
- 3 cups chicken broth
- 1 teaspoon thyme
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chicken thighs and brown on all sides.
- Remove chicken and set aside.
- Add onion, carrots, and potatoes to the pot and sauté until softened.
- Return chicken to the pot.
- Pour in chicken broth, add thyme and bay leaf.
- Bring to a boil, then reduce heat and simmer for 30-40 minutes.
- Season with salt and pepper before serving.
Notes
- Serve with crusty bread for a complete meal.
- You can add peas for extra color and nutrition.
