Description
A refreshing salad combining quinoa, apples, and a honey mustard dressing, topped with crispy shallots.
Ingredients

- 1 cup quinoa
- 2 cups water
- 1 apple, diced
- 1/4 cup honey
- 2 tablespoons Dijon mustard
- 1/4 cup olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup crispy shallots
Instructions
- Rinse the quinoa under cold water.
- In a pot, combine quinoa and water. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- Remove from heat and let it cool.
- In a bowl, whisk together honey, Dijon mustard, olive oil, salt, and pepper.
- Add the cooled quinoa and diced apple to the bowl.
- Toss everything to combine.
- Top with crispy shallots before serving.
Notes
- Adjust the sweetness by adding more or less honey.
- Store leftovers in the fridge for up to 3 days.
- Use different types of apples for varied flavor.
