Description

A refreshing salad combining quinoa, apples, and a honey mustard dressing, topped with crispy shallots.


Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 apple, diced
  • 1/4 cup honey
  • 2 tablespoons Dijon mustard
  • 1/4 cup olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup crispy shallots

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, combine quinoa and water. Bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes.
  4. Remove from heat and let it cool.
  5. In a bowl, whisk together honey, Dijon mustard, olive oil, salt, and pepper.
  6. Add the cooled quinoa and diced apple to the bowl.
  7. Toss everything to combine.
  8. Top with crispy shallots before serving.

Notes

  • Adjust the sweetness by adding more or less honey.
  • Store leftovers in the fridge for up to 3 days.
  • Use different types of apples for varied flavor.
