Ingredients

- 1 whole chicken (about 3–4 pounds)
- 8 cups chicken broth
- 3 carrots, sliced
- 2 celery stalks, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon thyme
- 1 bay leaf
- Salt and pepper to taste
- 8 ounces egg noodles
- Fresh parsley for garnish
Instructions
- In a large pot, combine the chicken and chicken broth.
- Add carrots, celery, onion, garlic, thyme, bay leaf, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for about 1 hour.
- Remove the chicken and let it cool. Shred the meat and discard the bones.
- Add egg noodles to the pot and cook according to package instructions.
- Return shredded chicken to the pot and heat through.
- Serve hot, garnished with fresh parsley.

- Use rotisserie chicken for a quicker option.
- Add more vegetables like peas or corn for extra nutrition.
