A healthy vegetable frittata packed with nutrients and flavor.


Ingredients

  • 6 large eggs
  • 1 cup spinach, chopped
  • 1/2 cup bell peppers, diced
  • 1/2 cup onions, diced
  • 1/2 cup mushrooms, sliced
  • 1/4 cup milk
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together the eggs and milk.
  3. Heat olive oil in an oven-safe skillet over medium heat.
  4. Add onions and bell peppers, sauté until soft.
  5. Add mushrooms and spinach, cook until spinach wilts.
  6. Pour the egg mixture over the vegetables.
  7. Cook for 3-4 minutes until edges start to set.
  8. Transfer the skillet to the oven and bake for 15-20 minutes until the eggs are fully set.
  9. Remove from oven, let cool slightly, then slice and serve.
