Ingredients

- 6 large eggs
- 1 cup spinach, chopped
- 1/2 cup bell peppers, diced
- 1/2 cup onions, diced
- 1/2 cup mushrooms, sliced
- 1/4 cup milk
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, whisk together the eggs and milk.
- Heat olive oil in an oven-safe skillet over medium heat.
- Add onions and bell peppers, sauté until soft.
- Add mushrooms and spinach, cook until spinach wilts.
- Pour the egg mixture over the vegetables.
- Cook for 3-4 minutes until edges start to set.
- Transfer the skillet to the oven and bake for 15-20 minutes until the eggs are fully set.
- Remove from oven, let cool slightly, then slice and serve.
Notes
- Feel free to add your favorite vegetables.
- Great for meal prep and can be stored in the refrigerator.
