Ingredients

- 1 lb ground chicken
- 1 cup cooked quinoa
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, diced
- 1/4 cup feta cheese, crumbled
- 1/4 cup Kalamata olives, sliced
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- In a skillet, heat olive oil over medium heat.
- Add ground chicken and cook until browned, about 5-7 minutes.
- Season with salt, pepper, and oregano.
- In a large bowl, combine cooked quinoa, cucumber, tomatoes, red onion, olives, and feta.
- Drizzle with lemon juice and mix well.
- Serve the quinoa mixture topped with ground chicken.
