Ingredients

  • 1 cup cooked quinoa
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, diced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup Kalamata olives, sliced
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. In a skillet, heat olive oil over medium heat.
  2. Add ground chicken and cook until browned, about 5-7 minutes.
  3. Season with salt, pepper, and oregano.
  4. In a large bowl, combine cooked quinoa, cucumber, tomatoes, red onion, olives, and feta.
  5. Drizzle with lemon juice and mix well.
  6. Serve the quinoa mixture topped with ground chicken.
