- 1/2 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup rolled oats
- Your favorite jelly or jam for filling
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine peanut butter, honey or maple syrup, vanilla extract, baking soda, and salt.
- Add rolled oats and mix until well combined.
- Drop tablespoon-sized amounts of dough onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until edges are lightly browned.
- Allow cookies to cool completely on a wire rack.
- Spread your favorite jelly or jam on one cookie and top with another to form a sandwich.
