Healthy Flourless Peanut Butter & Jelly Cookie Sandwiches are a delicious and nutritious treat that combines the classic flavors of peanut butter and jelly in a gluten-free cookie form.


Ingredients

  • 1 cup natural peanut butter
  • 1/2 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup rolled oats
  • Your favorite jelly or jam for filling

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine peanut butter, honey or maple syrup, vanilla extract, baking soda, and salt.
  3. Add rolled oats and mix until well combined.
  4. Drop tablespoon-sized amounts of dough onto a baking sheet lined with parchment paper.
  5. Bake for 10-12 minutes or until edges are lightly browned.
  6. Allow cookies to cool completely on a wire rack.
  7. Spread your favorite jelly or jam on one cookie and top with another to form a sandwich.
