Ingredients

  • 2 cups rolled oats
  • 2 cups almond milk
  • 1 large apple, diced
  • 1/2 cup maple syrup
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 1/2 cup walnuts, chopped (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix rolled oats, almond milk, diced apple, maple syrup, cinnamon, nutmeg, salt, and vanilla extract.
  3. If using, fold in the chopped walnuts.
  4. Grease a muffin tin and pour the mixture evenly into the cups.
  5. Bake for 25-30 minutes or until set and golden brown.
  6. Let cool before removing from the tin.
