Description

A sweet and moist cake made with carrots and pineapple, topped with cream cheese frosting.


Ingredients

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup vegetable oil
  • 4 large eggs
  • 3 cups grated carrots
  • 1 cup crushed pineapple, drained
  • 1 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour two 9-inch round cake pans.
  3. In a large bowl, mix flour, sugar, baking powder, baking soda, salt, and cinnamon.
  4. Add oil and eggs to the dry ingredients and mix well.
  5. Fold in grated carrots, crushed pineapple, and walnuts if using.
  6. Pour the batter evenly into the prepared pans.
  7. Bake for 25-30 minutes or until a toothpick comes out clean.
  8. Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  9. Optional: Frost with cream cheese frosting once cooled.

Notes

  • Store leftovers in the refrigerator.
  • Can be made a day ahead for better flavor.
  • Substitute walnuts with pecans if desired.
