- 2 cups pumpkin puree
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 4 large flour tortillas
- 2 cups shredded cheese (cheddar or mozzarella)
- Cooking spray or oil for frying
Instructions
- In a bowl, mix pumpkin puree, cumin, chili powder, garlic powder, and salt.
- Heat a skillet over medium heat and lightly grease it with cooking spray or oil.
- Place one tortilla in the skillet and spread half of the pumpkin mixture on one half of the tortilla.
- Sprinkle cheese over the pumpkin mixture and fold the tortilla in half.
- Cook for 3-4 minutes on each side until golden brown and the cheese melts.
- Repeat with remaining tortillas and filling.
- Slice into wedges and serve warm.
Notes
- Feel free to add black beans or corn for extra flavor.
