Description

Grilled Thai coconut chicken skewers are flavorful and easy to prepare. They combine tender chicken marinated in a coconut milk mixture with fragrant spices, grilled to perfection.

Ingredients

Scale
  • 1 lb chicken breast, cut into cubes
  • 1 cup coconut milk
  • 2 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon lime juice
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 teaspoon red curry paste
  • Wooden skewers, soaked in water

Instructions

  1. In a bowl, mix coconut milk, soy sauce, brown sugar, lime juice, garlic, ginger, and red curry paste.
  2. Add chicken cubes to the marinade and mix well. Let it marinate for at least 30 minutes.
  3. Preheat the grill to medium-high heat.
  4. Thread marinated chicken onto the soaked skewers.
  5. Grill skewers for 10-15 minutes, turning occasionally, until chicken is cooked through.
  6. Remove from grill and serve hot.

Notes

  • Soak wooden skewers for at least 30 minutes to prevent burning.
  • Adjust the amount of red curry paste for desired spice level.
