- 1 lb (about 450 g) boneless, skinless chicken breast
- 6 cups (about 1.4 liters) vegetable broth
- 1/4 cup freshly squeezed lemon juice
- 2 medium carrots, diced
- 2 stalks celery, diced
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 cup (about 200 g) orzo pasta
- 1/4 cup fresh dill, chopped (plus extra for garnish)
- Salt to taste
- Pepper to taste
Instructions
- Prepare the ingredients by chopping the vegetables and mincing the garlic.
- Add the chicken breast to the bottom of the slow cooker and layer the diced carrots, celery, chopped onion, and minced garlic on top.
- Pour in the vegetable broth and lemon juice, stirring gently to combine.
- Season with salt and pepper, cover, and cook on low for 6-7 hours or high for 3-4 hours until the chicken is tender.
- Remove the chicken, shred it, and return it to the soup.
- Add the orzo pasta and cook for an additional 15-20 minutes on high until tender.
- Stir in the chopped dill before serving and adjust seasoning if needed.
Notes
- Store leftovers in an airtight container in the fridge for up to 3 days.
- For freezing, leave out the orzo and add it fresh when reheating.
- For extra flavor, sauté garlic and onion before adding to the slow cooker.
