A nourishing soup inspired by traditional Greek ingredients that promotes healing and wellness.


Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 3 carrots, sliced
  • 2 stalks celery, chopped
  • 1 zucchini, diced
  • 1 cup spinach, chopped
  • 6 cups vegetable broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Juice of 1 lemon

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, sauté until softened.
  3. Stir in carrots and celery, cook for 5 minutes.
  4. Add zucchini, spinach, vegetable broth, oregano, and thyme.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Season with salt, pepper, and lemon juice before serving.

Notes

  • This soup can be stored in the refrigerator for up to 3 days.
  • Feel free to add your favorite vegetables.
  • For a heartier meal, add cooked beans or lentils.
