Ingredients

Instructions
- In a bowl, beat the eggs with salt and pepper.
- Heat olive oil in a non-stick skillet over medium heat.
- Add the beaten eggs to the skillet.
- As the edges begin to set, sprinkle feta cheese, spinach, and tomatoes on one half of the omelet.
- Fold the omelet in half and cook until fully set.
- Slide the omelet onto a plate and serve warm.
