Description
Gordon Ramsay’s Sticky Toffee Pudding is a rich and moist dessert made with dates, served with a warm toffee sauce.
Ingredients

- 200g pitted dates
- 250ml boiling water
- 1 teaspoon baking soda
- 100g unsalted butter
- 150g brown sugar
- 2 large eggs
- 200g self-raising flour
- 1 teaspoon vanilla extract
- For the sauce: 200g brown sugar
- 100g unsalted butter
- 250ml double cream
Instructions
- Preheat the oven to 180°C (350°F).
- Chop the pitted dates and pour boiling water over them. Stir in baking soda and let it sit.
- Cream together butter and brown sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition.
- Stir in the date mixture and vanilla extract.
- Fold in the self-raising flour gently.
- Pour the batter into a greased baking dish.
- Bake for 30-35 minutes or until a skewer comes out clean.
- For the sauce, melt the butter and sugar in a saucepan, then add cream and stir until smooth.
- Serve the pudding warm, drizzled with toffee sauce.
Notes
- Store leftovers in the refrigerator.
- Reheat in the microwave before serving.
- Can be served with ice cream or whipped cream.
