- 2 pounds potatoes
- 4 slices bacon
- 1/2 cup onion, chopped
- 1/4 cup apple cider vinegar
- 1 tablespoon sugar
- 1 teaspoon mustard
- Salt and pepper to taste
- 1/4 cup parsley, chopped
Instructions
- Boil the potatoes until tender, then peel and slice.
- Cook the bacon in a skillet until crispy, then remove and chop.
- In the bacon fat, sauté the onion until translucent.
- Add vinegar, sugar, mustard, salt, and pepper to the skillet and stir.
- Combine the potatoes, bacon, and dressing in a bowl.
- Garnish with parsley and serve warm or at room temperature.
Notes
- This salad can be served warm or cold.
- Adjust seasoning according to taste.
- For a vegetarian version, omit the bacon.
