Description

A classic German potato salad made with tender potatoes, crispy bacon, and a tangy vinegar dressing.


Ingredients

  • 2 pounds potatoes
  • 4 slices bacon
  • 1/2 cup onion, chopped
  • 1/4 cup apple cider vinegar
  • 1 tablespoon sugar
  • 1 teaspoon mustard
  • Salt and pepper to taste
  • 1/4 cup parsley, chopped

Instructions

  1. Boil the potatoes until tender, then peel and slice.
  2. Cook the bacon in a skillet until crispy, then remove and chop.
  3. In the bacon fat, sauté the onion until translucent.
  4. Add vinegar, sugar, mustard, salt, and pepper to the skillet and stir.
  5. Combine the potatoes, bacon, and dressing in a bowl.
  6. Garnish with parsley and serve warm or at room temperature.

Notes

  • This salad can be served warm or cold.
  • Adjust seasoning according to taste.
  • For a vegetarian version, omit the bacon.
