Description
A refreshing salad made with quinoa and apples.
Ingredients
Scale
- 1 cup quinoa
- 2 cups water
- 1 large apple, diced
- 1/2 cup walnuts, chopped
- 1/4 cup dried cranberries
- 1/4 cup parsley, chopped
- 1/4 cup feta cheese, crumbled
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water.
- In a pot, combine quinoa and water. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- Fluff quinoa with a fork and let it cool.
- In a large bowl, combine cooled quinoa, diced apple, walnuts, cranberries, parsley, and feta cheese.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour dressing over the salad and toss to combine.
- Serve immediately or refrigerate for later.
Notes
- Can substitute apple with pear.
- Use any nuts of your choice.
- Feta can be omitted for a vegan option.
