Description

A refreshing salad made with quinoa and apples.


Ingredients

Scale
  • 1 cup quinoa
  • 2 cups water
  • 1 large apple, diced
  • 1/2 cup walnuts, chopped
  • 1/4 cup dried cranberries
  • 1/4 cup parsley, chopped
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, combine quinoa and water. Bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes.
  4. Fluff quinoa with a fork and let it cool.
  5. In a large bowl, combine cooled quinoa, diced apple, walnuts, cranberries, parsley, and feta cheese.
  6. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  7. Pour dressing over the salad and toss to combine.
  8. Serve immediately or refrigerate for later.

Notes

  • Can substitute apple with pear.
  • Use any nuts of your choice.
  • Feta can be omitted for a vegan option.
