Description

A creamy and flavorful twist on classic mac and cheese with the rich taste of French onion soup.


Ingredients

  • 8 oz elbow macaroni
  • 1 large onion, thinly sliced
  • 2 tablespoons butter
  • 2 cups beef broth
  • 1 cup heavy cream
  • 2 cups shredded Gruyère cheese
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. Cook macaroni according to package instructions. Drain and set aside.
  2. In a large pot, melt butter over medium heat. Add onions and cook until caramelized, about 15-20 minutes.
  3. Add beef broth and thyme to the pot. Simmer for 5 minutes.
  4. Stir in heavy cream and bring to a simmer.
  5. Add cooked macaroni and cheeses to the pot. Stir until melted and creamy.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with extra cheese if desired.

Notes

  • For a vegetarian option, use vegetable broth instead of beef broth.
  • Feel free to add croutons on top for extra crunch.
