A creamy and flavorful twist on classic mac and cheese with the rich taste of French onion soup.
Ingredients

- 8 oz elbow macaroni
- 1 large onion, thinly sliced
- 2 tablespoons butter
- 2 cups beef broth
- 1 cup heavy cream
- 2 cups shredded Gruyère cheese
- 1 cup shredded mozzarella cheese
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- Cook macaroni according to package instructions. Drain and set aside.
- In a large pot, melt butter over medium heat. Add onions and cook until caramelized, about 15-20 minutes.
- Add beef broth and thyme to the pot. Simmer for 5 minutes.
- Stir in heavy cream and bring to a simmer.
- Add cooked macaroni and cheeses to the pot. Stir until melted and creamy.
- Season with salt and pepper to taste.
- Serve hot, garnished with extra cheese if desired.
Notes
- For a vegetarian option, use vegetable broth instead of beef broth.
- Feel free to add croutons on top for extra crunch.
