Ingredients

  • 2 lbs beef stew meat, cubed
  • 4 cups apple cider
  • 1 onion, chopped
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • Salt and pepper to taste
  • 4 cups mashed potatoes

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add beef stew meat and brown on all sides.
  3. Add onion and garlic, cooking until onion is translucent.
  4. Pour in apple cider and add carrots, potatoes, thyme, and rosemary.
  5. Season with salt and pepper.
  6. Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours until beef is tender.
  7. Prepare mashed potatoes according to your preference.
  8. Serve the apple cider stew over mashed potatoes.
