Ingredients

- 2 lbs beef stew meat, cubed
- 4 cups apple cider
- 1 onion, chopped
- 3 carrots, sliced
- 3 potatoes, diced
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon thyme
- 1 teaspoon rosemary
- Salt and pepper to taste
- 4 cups mashed potatoes
Instructions
- Heat olive oil in a large pot over medium heat.
- Add beef stew meat and brown on all sides.
- Add onion and garlic, cooking until onion is translucent.
- Pour in apple cider and add carrots, potatoes, thyme, and rosemary.
- Season with salt and pepper.
- Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours until beef is tender.
- Prepare mashed potatoes according to your preference.
- Serve the apple cider stew over mashed potatoes.
Notes
- For a thicker stew, add a cornstarch slurry.
- You can use chicken or vegetable broth instead of apple cider for a different flavor.
