Description

A simple and flavorful coconut lime fish curry served with jasmine rice.


Ingredients

  • 1 lb white fish fillets
  • 1 can (14 oz) coconut milk
  • 2 tablespoons lime juice
  • 1 tablespoon fish sauce
  • 1 tablespoon red curry paste
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1 bell pepper, sliced
  • 1 cup jasmine rice
  • 2 cups water
  • Fresh cilantro for garnish

Instructions

  1. Rinse jasmine rice under cold water until the water runs clear.
  2. In a pot, combine rice and water; bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes or until water is absorbed.
  4. In a large skillet, heat vegetable oil over medium heat.
  5. Add garlic and ginger; sauté for 1 minute.
  6. Stir in red curry paste and cook for another minute.
  7. Add coconut milk, lime juice, and fish sauce; stir well.
  8. Add fish fillets and bell pepper; simmer for 10 minutes or until fish is cooked through.
  9. Fluff rice with a fork and serve with curry on top.
  10. Garnish with fresh cilantro.

Notes

  • Use any white fish like cod or tilapia.
  • Adjust curry paste according to your spice preference.
  • Serve with lime wedges for extra flavor.
