Description

A refreshing salad made with quinoa, cucumber, and feta cheese.


Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 large cucumber, diced
  • 1 cup feta cheese, crumbled
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water.
  2. Combine quinoa and water in a pot. Bring to a boil, then reduce heat and simmer for 15 minutes.
  3. Fluff quinoa with a fork and let it cool.
  4. In a large bowl, combine cooled quinoa, cucumber, feta cheese, red onion, and parsley.
  5. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  6. Pour dressing over the salad and toss to combine.
  7. Serve chilled or at room temperature.

Notes

  • This salad can be made a day in advance.
  • Feel free to add other vegetables like bell peppers or tomatoes.
