Description
A refreshing salad made with quinoa, cucumber, and feta cheese.
Ingredients

- 1 cup quinoa
- 2 cups water
- 1 large cucumber, diced
- 1 cup feta cheese, crumbled
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- Rinse the quinoa under cold water.
- Combine quinoa and water in a pot. Bring to a boil, then reduce heat and simmer for 15 minutes.
- Fluff quinoa with a fork and let it cool.
- In a large bowl, combine cooled quinoa, cucumber, feta cheese, red onion, and parsley.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour dressing over the salad and toss to combine.
- Serve chilled or at room temperature.
Notes
- This salad can be made a day in advance.
- Feel free to add other vegetables like bell peppers or tomatoes.
- Adjust the amount of feta cheese based on your preference.
