- 2 boneless, skinless chicken breasts (about 1 lb or 450 g)
- 2 cans (15 oz each) white beans (such as cannellini or great northern), drained and rinsed
- 1 can (4 oz) diced green chilies
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth (about 1 liter)
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1 lime, juiced
- 1 cup sour cream
- Salt and pepper to taste
- Optional toppings: chopped cilantro, sliced jalapeños, shredded cheese, or avocado
Instructions
- Place the boneless, skinless chicken breasts at the bottom of the crockpot.
- Pour the drained white beans and diced green chilies over the chicken.
- Sauté the chopped onion in a skillet until translucent, then add minced garlic and cook for an additional minute. Transfer to the crockpot.
- Pour in the chicken broth and add ground cumin, dried oregano, salt, and pepper. Stir gently.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Remove the chicken, shred it, and return it to the chili.
- Stir in lime juice and sour cream, adjusting seasoning as needed.
- Ladle into bowls and garnish with toppings of choice.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- To reheat, warm on the stove or in the microwave.
- For freezing, place in a freezer-safe container for up to 3 months.
