Description

A hearty and flavorful Crockpot Vegan Lentil Chili that’s perfect for chilly evenings or gatherings.


Ingredients

  • 1 cup green lentils, rinsed
  • 1 cup brown lentils, rinsed
  • 2 cans diced tomatoes (14.5 oz each)
  • 2 medium bell peppers (one red and one green), diced
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper (or to taste)
  • 1/4 cup fresh cilantro, chopped (for garnish)

Instructions

  1. Rinse the green and brown lentils under cold water to remove any debris. Dice the bell peppers and onion, and mince the garlic.
  2. In your crockpot, add the rinsed lentils, diced tomatoes (with their juice), diced bell peppers, diced onion, and minced garlic. Pour in the vegetable broth and stir well to combine.
  3. Sprinkle in the chili powder, ground cumin, salt, and black pepper. Mix everything together to ensure the spices are evenly distributed.
  4. Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours. Once done, stir and taste, adjusting seasoning if needed. Serve hot!

Notes

  • For a thicker chili, mash some of the lentils with a fork before serving.
  • Store leftovers in an airtight container in the refrigerator for up to 5 days or freeze for up to 3 months.
