A hearty and flavorful Crockpot Vegan Lentil Chili that’s perfect for chilly evenings or gatherings.

- 1 cup green lentils, rinsed
- 1 cup brown lentils, rinsed
- 2 cans diced tomatoes (14.5 oz each)
- 2 medium bell peppers (one red and one green), diced
- 1 large onion, diced
- 4 cloves garlic, minced
- 4 cups vegetable broth
- 2 tablespoons chili powder
- 1 tablespoon ground cumin
- 1 teaspoon salt (or to taste)
- 1/2 teaspoon black pepper (or to taste)
- 1/4 cup fresh cilantro, chopped (for garnish)
Instructions
- Rinse the green and brown lentils under cold water to remove any debris. Dice the bell peppers and onion, and mince the garlic.
- In your crockpot, add the rinsed lentils, diced tomatoes (with their juice), diced bell peppers, diced onion, and minced garlic. Pour in the vegetable broth and stir well to combine.
- Sprinkle in the chili powder, ground cumin, salt, and black pepper. Mix everything together to ensure the spices are evenly distributed.
- Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours. Once done, stir and taste, adjusting seasoning if needed. Serve hot!
Notes
- For a thicker chili, mash some of the lentils with a fork before serving.
- Store leftovers in an airtight container in the refrigerator for up to 5 days or freeze for up to 3 months.
