- 1 pound ground turkey
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup sweet corn (frozen or canned, drained)
- 1 can (28 oz) diced tomatoes, with juices
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 tablespoons chili powder
- 1 tablespoon ground cumin
- 1 cup bell peppers, diced (any color)
- 1 tablespoon olive oil
- Salt and pepper to taste
- Optional toppings: shredded cheese, sour cream, chopped cilantro, avocado
Instructions
- Prepare the ingredients by dicing the onion and bell peppers, and mincing the garlic.
- Sauté the ground turkey in a skillet with olive oil until browned and fully cooked.
- Combine the cooked turkey and all other ingredients in a large crockpot.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Serve warm, topped with your choice of toppings.
Notes
- For a vegetarian option, use lentils instead of turkey.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- For longer storage, freeze the chili for up to 3 months.
