  • 2 cups fresh pineapple chunks (about 1 medium pineapple, peeled and cut into chunks)
  • 1 cup teriyaki sauce
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 green onions, sliced (for garnish)
  • 2 tablespoons sesame seeds (for garnish)
  • Salt and pepper to taste

Instructions

  1. Prepare the crockpot by lightly greasing the inside with cooking spray or oil.
  2. Pat the salmon fillets dry and season both sides with salt and pepper.
  3. In a small bowl, mix the teriyaki sauce, minced garlic, and grated ginger.
  4. Place the fresh pineapple chunks at the bottom of the crockpot.
  5. Carefully place the seasoned salmon fillets on top of the pineapple chunks.
  6. Drizzle the teriyaki sauce mixture evenly over the salmon fillets.
  7. Cover and cook on low for 2 to 3 hours, or until the salmon is cooked through.
  8. Remove the salmon and pineapple, drizzle with remaining sauce, and garnish with green onions and sesame seeds.
