- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- 200 milliliters (3/4 cup) heavy cream
- Additional brown sugar for the toffee sauce (optional)
Instructions
- Prepare the dates by soaking chopped dates in boiling water for 15-20 minutes and mashing them into a chunky paste.
- Mix the batter by creaming together softened butter and brown sugar, then adding eggs and vanilla extract.
- Combine dry ingredients by whisking together flour and baking powder, then adding to the wet mixture.
- Incorporate the dates into the batter and pour it into a greased crockpot.
- Cook the pudding on low for 4-5 hours until set.
- Make the toffee sauce by heating heavy cream and brown sugar until dissolved and slightly thickened.
