A delightful breakfast porridge combining the sweetness of ripe pears with the rich flavor of maple syrup, perfect for chilly mornings.
Ingredients

- 1 cup quinoa, rinsed
- 4 cups almond milk (or any milk of your choice)
- 2 ripe pears, diced
- 1/4 cup maple syrup
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- 1/2 cup walnuts, chopped
- Pinch of salt
Instructions
- Rinse the quinoa under cold water and drain well.
- In the crockpot, combine the rinsed quinoa, almond milk, diced pears, maple syrup, ground cinnamon, vanilla extract, and a pinch of salt. Stir well.
- Cover the crockpot and cook on low for 4-6 hours or on high for 2-3 hours.
- About 15 minutes before serving, stir in the chopped walnuts.
- Once cooked, stir the porridge and add more milk if desired. Serve warm.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- To reheat, warm in the microwave or on the stove with a splash of milk.
- For freezing, portion into freezer-safe containers and it can last up to 2 months.
