Ingredients

- 3 ripe peaches, diced or sliced
- 1/4 cup honey (plus extra for drizzling)
- 2 tablespoons unsalted butter
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- 4 cups milk (or a dairy-free alternative)
- A pinch of salt
Instructions
- Prepare the crockpot by greasing it with butter or cooking spray.
- Combine the rolled oats, ground cinnamon, and a pinch of salt in a large bowl.
- Add the milk, honey, and vanilla extract, stirring until well combined.
- Layer in the diced or sliced peaches, folding them gently into the mixture.
- Scatter small pieces of unsalted butter over the top.
- Pour the mixture into the prepared crockpot and cook on low for 6-8 hours or on high for 3-4 hours.
- Stir the oatmeal once cooked and add a splash more milk if desired.
- Serve warm, drizzling with extra honey.
