Ingredients

  • 4 salmon fillets (about 6 ounces each)
  • 1/4 cup honey
  • 4 cloves garlic, minced
  • 1/4 cup soy sauce
  • 2 tablespoons lemon juice (freshly squeezed)
  • 1/4 cup unsalted butter (1/2 stick)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh parsley (for garnish)

Instructions

  1. In a medium bowl, combine the honey, minced garlic, soy sauce, and lemon juice. Whisk together until well blended.
  2. Lightly grease the bottom of the crockpot with olive oil.
  3. Pat the salmon fillets dry with paper towels and season both sides with salt and pepper.
  4. Arrange the salmon fillets in the crockpot in a single layer and pour the honey garlic sauce over the top.
  5. Cut the butter into small pieces and scatter them on top of the salmon fillets.
  6. Cover the crockpot and cook on low for 2 to 3 hours, or until the salmon is cooked through and flakes easily with a fork.

  • For a gluten-free option, use tamari instead of soy sauce.
  • Maple syrup can replace honey for a vegan alternative.
  • Use olive oil instead of butter for a lighter version.
  • Add lemon slices on top of the salmon before cooking for extra flavor.
