Ingredients

  • 4 large sweet potatoes, peeled and cubed
  • 1 head of garlic
  • 4 tablespoons unsalted butter
  • 1/2 cup heavy cream (or milk for a lighter option)
  • Salt – to taste
  • Black pepper – to taste
  • 1 tablespoon olive oil (for roasting garlic)

Instructions

  1. Preheat your oven to 400°F (200°C). Slice the top off the head of garlic, drizzle with olive oil, wrap in aluminum foil, and roast for 30-35 minutes until soft.
  2. In a crockpot, add the peeled and cubed sweet potatoes and pour in enough water to cover them (about 1-2 cups). Season with salt.
  3. Cover the crockpot and cook on high for 4 hours or on low for 6-8 hours until tender.
  4. Once cooked, drain excess water, add roasted garlic, butter, and heavy cream, and mash until smooth and creamy.
