Instructions
- Preheat your oven to 400°F (200°C). Slice the top off the head of garlic, drizzle with olive oil, wrap in aluminum foil, and roast for 30-35 minutes until soft.
- In a crockpot, add the peeled and cubed sweet potatoes and pour in enough water to cover them (about 1-2 cups). Season with salt.
- Cover the crockpot and cook on high for 4 hours or on low for 6-8 hours until tender.
- Once cooked, drain excess water, add roasted garlic, butter, and heavy cream, and mash until smooth and creamy.
