Ingredients

  • 2 boneless, skinless chicken breasts (about 1 lb or 450 g)
  • 2 bell peppers (any color), sliced
  • 1 medium onion, sliced
  • 2 tablespoons fajita seasoning (store-bought or homemade)
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice (freshly squeezed)
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)
  • Tortillas for serving
  • Optional toppings: sour cream, guacamole, salsa, cheese

Instructions

  1. Prepare the ingredients by slicing the bell peppers and onion into thin strips.
  2. Mix the fajita seasoning with olive oil and lime juice in a small bowl.
  3. Layer the sliced chicken breasts at the bottom of the crockpot, followed by the sliced bell peppers and onions.
  4. Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours. Shred the chicken if left whole and mix everything together before serving.
