Instructions
- Prepare the dates by chopping and soaking them in water for 15-20 minutes, then mash into a paste.
- Mix the dry ingredients: almond flour, baking powder, and salt in a large bowl.
- Combine wet ingredients: whisk eggs, brown sugar, vanilla extract, and date paste until smooth.
- Gradually mix wet ingredients into dry ingredients until just combined.
- Prepare the crockpot by greasing it, then pour in the batter.
- Cook on low heat for 2 to 2.5 hours until set and a toothpick comes out clean.
- Cool the cake for 10-15 minutes before removing it from the crockpot.
- Slice and serve warm, optionally with whipped cream or ice cream.
