Description

A delightful blend of flavors and textures featuring tender chicken simmered in a creamy Caesar sauce with perfectly cooked pasta.

Ingredients

Scale
  • 500 grams boneless chicken breasts (about 1 pound)
  • 250 grams penne pasta (about 8 ounces)
  • 240 ml Caesar dressing (1 cup)
  • 225 grams cream cheese (8 ounces), softened
  • 3 cloves garlic, minced
  • 100 grams grated Parmesan cheese (1 cup)
  • 480 ml chicken broth (2 cups)
  • 30 grams fresh parsley, chopped (1/4 cup)
  • Salt and pepper to taste

Instructions

  1. Place the boneless chicken breasts at the bottom of the crockpot and season with salt and pepper.
  2. In a medium bowl, combine the Caesar dressing, softened cream cheese, minced garlic, and chicken broth. Whisk until smooth.
  3. Pour the sauce mixture over the chicken in the crockpot.
  4. Cover and cook on low for 4-6 hours or on high for 2-3 hours until the chicken is tender.
  5. About 30 minutes before serving, cook the penne pasta according to package instructions until al dente. Drain and set aside.
  6. Remove the chicken from the crockpot and shred it using two forks. Return the shredded chicken to the crockpot.
  7. Add the cooked penne pasta to the crockpot and mix well.
  8. Stir in the grated Parmesan cheese until melted.
  9. Spoon the creamy chicken Caesar pasta into bowls and garnish with chopped fresh parsley.

Notes

  • For a lighter version, use Greek yogurt instead of Caesar dressing.
  • If gluten-free, opt for gluten-free pasta.
  • Add vegetables like spinach or cherry tomatoes for extra nutrition.
  • For a dairy-free option, use plant-based cream cheese and nutritional yeast instead of Parmesan.
