- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 3 medium carrots, sliced
- 2 celery stalks, chopped
- 1 medium onion, diced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 can refrigerated biscuit dough (about 16 oz)
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- Salt and black pepper to taste
Instructions
- Prepare the vegetables by washing and slicing the carrots, chopping the celery, and dicing the onion.
- Layer the ingredients in the crockpot, starting with the chicken breasts at the bottom, followed by the sliced carrots, chopped celery, and diced onion.
- Add the chicken broth and seasonings, stirring to combine.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours until the chicken is tender.
- Shred the chicken and return it to the pot.
- Add the heavy cream and stir to incorporate.
- Prepare the dumplings by cutting the biscuit dough into quarters and dropping them into the crockpot.
- Cover and cook on high for an additional 30-40 minutes until the dumplings are fluffy and cooked through.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Reheat in the microwave or on the stove; freeze before adding dumplings for best results.
- For extra flavor, add a splash of lemon juice before serving.
