Description

A comforting and creamy dish featuring tender chicken and fluffy dumplings, perfect for chilly evenings.


Ingredients

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 3 medium carrots, sliced
  • 2 celery stalks, chopped
  • 1 medium onion, diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 can refrigerated biscuit dough (about 16 oz)
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste

Instructions

  1. Prepare the vegetables by washing and slicing the carrots, chopping the celery, and dicing the onion.
  2. Layer the ingredients in the crockpot, starting with the chicken breasts at the bottom, followed by the sliced carrots, chopped celery, and diced onion.
  3. Add the chicken broth and seasonings, stirring to combine.
  4. Cover and cook on low for 6-7 hours or on high for 3-4 hours until the chicken is tender.
  5. Shred the chicken and return it to the pot.
  6. Add the heavy cream and stir to incorporate.
  7. Prepare the dumplings by cutting the biscuit dough into quarters and dropping them into the crockpot.
  8. Cover and cook on high for an additional 30-40 minutes until the dumplings are fluffy and cooked through.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheat in the microwave or on the stove; freeze before adding dumplings for best results.
  • For extra flavor, add a splash of lemon juice before serving.
