- 1 onion, chopped

- 24 ounces marinara sauce
- 4 cups beef broth
- 2 teaspoons Italian seasoning
- 8 ounces lasagna noodles, broken into pieces
- 1 cup ricotta cheese
- 2 cups shredded mozzarella cheese
- Fresh basil for garnish
- Salt and pepper to taste

Instructions
- In a skillet, brown the ground beef over medium heat. Add the chopped onion and minced garlic, cooking until the onion is soft. Drain any excess fat.
- Transfer the beef mixture to your crockpot. Add the marinara sauce, beef broth, Italian seasoning, and broken lasagna noodles. Stir well to combine.
- Cover the crockpot and cook on low for 4-6 hours or on high for 2-3 hours.
- About 15 minutes before serving, stir in the ricotta and half of the shredded mozzarella cheese. Allow the soup to heat through until the cheese is melted and bubbly.
