Description

A delightful dish that combines sweet and savory flavors with tender chicken simmered in barbecue sauce and pineapple.


Ingredients

  • 4 boneless, skinless chicken breasts (about 1.5 lbs or 680 g)
  • 1 can (20 oz or 567 g) pineapple chunks in juice, drained (reserve juice)
  • 1 cup (240 ml) barbecue sauce
  • 1/4 cup (60 ml) soy sauce
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1/4 cup (15 g) green onions, chopped (for garnish)
  • Salt and pepper to taste

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. In a medium bowl, combine the barbecue sauce, soy sauce, minced garlic, grated ginger, and reserved pineapple juice. Stir well.
  3. Place the seasoned chicken breasts in the Crockpot and pour the sauce mixture over them. Add the drained pineapple chunks on top.
  4. Cover and cook on low for 6-7 hours or on high for 3-4 hours until the chicken is tender and fully cooked.
  5. Remove the chicken, shred it with two forks, and return it to the Crockpot, mixing it with the sauce and pineapple.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • To reheat, warm in the microwave or stovetop.
  • For freezing, place in a freezer-safe container for up to 3 months.
