- 4 boneless, skinless chicken breasts (about 1.5 lbs or 680 g)
- 1 can (20 oz or 567 g) pineapple chunks in juice, drained (reserve juice)
- 1 cup (240 ml) barbecue sauce
- 1/4 cup (60 ml) soy sauce
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1/4 cup (15 g) green onions, chopped (for garnish)
- Salt and pepper to taste
Instructions
- Season the chicken breasts with salt and pepper on both sides.
- In a medium bowl, combine the barbecue sauce, soy sauce, minced garlic, grated ginger, and reserved pineapple juice. Stir well.
- Place the seasoned chicken breasts in the Crockpot and pour the sauce mixture over them. Add the drained pineapple chunks on top.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours until the chicken is tender and fully cooked.
- Remove the chicken, shred it with two forks, and return it to the Crockpot, mixing it with the sauce and pineapple.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- To reheat, warm in the microwave or stovetop.
- For freezing, place in a freezer-safe container for up to 3 months.
