- 3 medium ripe bananas, mashed
- 6 cups of day-old bread, cubed (preferably brioche or challah)
- 1 cup of walnuts, chopped
- 4 large eggs
- 2 cups of milk (whole or 2%)
- 1 cup of brown sugar, packed
- 2 teaspoons of vanilla extract
- 1 teaspoon of ground cinnamon
- 1/2 teaspoon of ground nutmeg
- 1/4 teaspoon of salt
Instructions
- Prepare the bread by cubing it into bite-sized pieces.
- Mix the wet ingredients in a large bowl until well blended.
- Combine the cubed bread and chopped walnuts with the wet mixture.
- Prepare the crockpot by greasing it lightly.
- Transfer the mixture into the crockpot and spread it evenly.
- Cook on low for 4 to 5 hours or on high for 2 to 3 hours.
- Check for doneness with a toothpick.
- Let it cool for 10 minutes before serving.

- Store leftovers in an airtight container in the refrigerator for up to three days.
- Reheat in the microwave or oven at a low temperature.
