Description

A delightful dish that combines sweet and savory flavors with tender chicken simmered in a luscious apricot glaze.

Ingredients

Scale
  • 1.5 kg (approximately 3-4 lbs) chicken drumsticks
  • 1 cup apricot preserves (about 240 g)
  • 1/2 cup soy sauce (about 120 ml)
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon black pepper
  • 2 tablespoons sesame seeds (for garnish)
  • 2 green onions, sliced (optional, for garnish)

Instructions

  1. Prepare the chicken by rinsing and patting dry.
  2. Make the glaze by combining apricot preserves, soy sauce, garlic, ginger, and black pepper in a bowl.
  3. Coat the chicken in the glaze and place in the crockpot.
  4. Cook on low for 6-8 hours or high for 3-4 hours until tender.
  5. For crispy skin, transfer to a baking sheet and bake at 220°C (425°F) for 10-15 minutes.

Notes

  • For gluten-free, use tamari instead of soy sauce.
  • Honey can replace apricot preserves for a different sweetness.
  • Use chicken thighs for a juicier texture.
  • Add red pepper flakes for a spicier kick.
