A delightful dish that combines the warm flavors of cinnamon and sweet apples, perfect for breakfast or brunch.
Ingredients

- 8 cups of bread cubes (preferably day-old bread, such as French or brioche)
- 6 large eggs
- 2 cups of milk (whole or 2%)
- 1 teaspoon of ground cinnamon
- 1/2 cup of granulated sugar
- 1 teaspoon of vanilla extract
- 2 cups of diced apples (peeled and cored)
- 1/4 cup of maple syrup (plus extra for serving)
- A pinch of salt
- Cooking spray or butter (for greasing the Crockpot)
Instructions
- Prepare the Crockpot by greasing the inside with cooking spray or butter.
- In a large mixing bowl, whisk together the eggs, milk, ground cinnamon, sugar, vanilla extract, and a pinch of salt until well combined.
- In a separate bowl, add the bread cubes and diced apples, and gently toss them together.
- Layer half of the bread and apple mixture into the greased Crockpot, pour half of the egg mixture over it, then add the remaining bread and apple mixture, followed by the rest of the egg mixture. Drizzle maple syrup on top.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours until set and golden brown.
Notes
- Allow the casserole to cool completely before storing in an airtight container.
- Store in the refrigerator for up to 3 days or freeze for up to 2 months.
- Reheat individual portions in the microwave.
